Die Geschichte vom Schafweingarten Natural Wine by Lukas and Matthias Auer is a true speciality from the Thermenregion and tells a story of winemaking with time, handcraft and as little intervention as possible. The grapes come from the Schafweingarten vineyard in Tattendorf and are carefully harvested by hand.
The cuvée consists of 50% Pinot Noir and 50% St. Laurent. After harvest, the grapes are gently placed in an open tank and crushed by foot. The released must then begins fermenting naturally – a spontaneous fermentation that lasts around four weeks. The mash is subsequently pressed, the wine completes fermentation in wooden barrels and remains on the full lees for 15 months. It is bottled unfiltered, with minimal sulphur and in a distinctive stoneware bottle. Together with the gift box, it becomes an exceptional present for natural wine enthusiasts and wine lovers looking for something truly special.
