Die Geschichte vom Bienenweingarten Natural Wine from Bio Winery Auer showcases the distinctive white side of this exceptional natural wine range. The grapes come from the Bienenweingarten vineyard in Pfaffstätten and are harvested by hand – a wine that deliberately focuses on craftsmanship, spontaneous fermentation and minimal-intervention winemaking.
The cuvée consists of 50% Rotgipfler and 50% Zierfandler. After harvest, the grapes are gently placed in an open tank and crushed by foot. Once the released must begins to ferment, spontaneous fermentation continues for around four weeks. The mash is then pressed, the wine completes fermentation in wooden barrels and remains on the full lees for 13 months. It is subsequently bottled unfiltered and with minimal sulphur in a stoneware bottle. Presented in a gift box, this Natural Wine has a particularly distinctive character – a wine with personality, history, origin and the unmistakable signature of the Auer family.
